About these units

The gram is a thousandth of a kilogram. It is the base unit of nearly every recipe outside the US, and the reason kitchen scales beat cup measures for consistency.

The avoirdupois ounce is 1/16 of a pound. It should not be confused with the troy ounce used for precious metals, which is about 10% heavier.
